“We wanted a place where Bali residents and island visitors could enjoy great Indonesian food,” explained Senior Director of Heritage Polly Purser.
Indulge in Sunset Picnics
At the centre of the destination’s new offerings are Sunset Picnics, which are complemented by All-day and Legends menu items from The Kitchen, including new offerings by Executive Chef Tomy Saputra. A revamped cocktail menu by local mixologist Yudi Permana allows guests to create a personalised dining experience.
The picnics take place under terracotta umbrellas laid out on the terrace, where diners recline on traditional straw mats and sumptuous pillows to linger over evocative cocktails and food items inspired by John Hardy’s jewellry collection.
Signature dishes include Nasi Lawar, grilled local beef, Balinese daikon, moringa soup, and the incredible steamed jackfruit ‘tum’ wrapped in banana leaves and grilled on an open flame with chicken satay and sambal matah.
Nasi Goreng Tungku is a particular favourite, crafted from heritage Tabanan rice cooked in a traditional terracotta pot with smoked mushrooms, leeks and house-made sambal roa. The impressive dish is served with fresh seafood, cured egg, and traditional pickle on the side.
New Sharing Plates from The Kitchen offer light and easy dishes, including Satay and Tuna Tartare Magelang, Arak-infused tunas with shallots, green tomato, sour starfruit and fermented balado sauce, served on tempura betel leaves.
Inspired Cocktails for Sundown
Jamu Bar offers new cocktails — available with or without alcohol —created exclusively for Sunset Picnics. Highlights of the new offerings include clarified tipples infused with local flavours like The Nangka, with notes of arak, jackfruit and soursop, and the Kalimantan Calamansi Fizz with citrus gin, passionfruit, Prosecco and lemon jello.
Fall for the Flavours of Kudapan
From the chefs at The Kitchen come Kudapan, irresistible platters of festive Indonesian snacks, traditionally prepared to share with friends and neighbours. John Hardy’s Kudapan experience
begins with Biskuits, Indonesian biscuits traditionally served with tea. Next, an array of savoury bites arrive, including tempura betel leaves topped with tuna tartare and pretty toasted smoked beef and homemade pickle sandwiches wrapped in banana leaves follow. To finish, guests enjoy sweet treats, including coconut pancakes and small-batch jellies.
